By the end of the lesson, students will understand and apply the fundamentals of menu costing, including ingredient costs.

Business Planning
This lesson explores the concept of business plans—their purpose, benefit, and structure. Students will consider the role of a business plan in successfully developing any new start-up entity. They will review previous lesson content to see how that information should be used in a standard business plan model. Students will assess their knowledge of food truck design and development. They will also identify the components necessary to write a successful business plan.
Seasonal Event Design
The next four lessons each focus on tailoring trucks and menus for specific seasons and the final lesson deepens students’ menu development skills through scenario-based learning. Students will learn about traditions that surround each season and create seasonal food truck menus. By the end of the lessons, they will understand the history and significance of food traditions associated with homecoming football games, New Year’s Eve, spring break, and 4th of July.
